Focaccia with onions is an all-Ligurian specialty that is delicious and very soft but has that unmistakable flavor for those who love onions. The processing is the classic Genovese one. The great addition of onion, finely chopped and left to marinate in water, and extra virgin olive oil is the strong point of this preparation with a firm but balanced flavor. We use a white onion that combines a not too pronounced sweetness with a creamy texture.
